The house recommends:
* Fresh noodles
with wild mushrooms, natural liver and “perugudín”
cream.

This
dish is prepared by combining the best fresh pasta, the most highly
regarded mushroom of the Navarre woods, a round slice of goose
liver and fresh truffles.
* A salad of king prawns, and anchovies,
baby tomato stuffed with a tomato and pepper sauce with a thyme
sherry vinaigrette .
This is our recommended salad, which
blends the taste of tomatoes from the Navarre vegetable garden
with the flavour of the seafood.
* Slices of venison on a bed of raspberry
sauce and stewed quinces.
We specialise in game dishes and
this is one of the most appreciated. The secret lies in the special
sauce the meat is cooked in.
* Warm pears cooked in Chardonay
white wine from Navarre and nutmeg flavoured ice cream
* Flaky pastry with caramelised banana
and sesame seeds on a bed of special cream with licaor and meringue
ice cream
* These desserts, like all the confectionery
and pastries we offer are completely home made and are prepared
by our pastry maker. Also, we cannot forget our flagship: the
junket, our junket of the Venta Ulzama, with the typical taste
of burnt stone.
Special characteristics of
the restaurant:
There are facilities for all types of banquettes: weddings, christenings,
and communions… that are precisely one of our specialities,
thanks to the spacious rooms we have available. In the castle
dungeons we have installed a delightful wine cellar which is open
to our customers. What is more, the surroundings are unequalled,
the castle is located on the heights dominating the Pamplona valley.
